Mumbai street food style grilled Sandwich.


                                        
                                                  Ingredients



  • 3 slices Sandwich bread
  • butter as required
  • Cilantro chutney 
  • 1 medium potato, boiled and sliced into rounds
  • 1 small cucumber thinly sliced
  • 1 small onion, thinly sliced
  • 1 small bell pepper , thinly sliced
  • 1 medium tomato ,thinly sliced
  • Grated cheese
  • Sandwich masala or chaat masala
  • Griddle or a grill sandwich press

                                                         Method


  • Spread the butter on three slices. Spread generously, so bread will not become soggy after spreading chutney.
  • Now spread about 1 ½ teaspoon of Cilantro chutney on each slices.
  • Now place few sliced of potatoes in single layer. Sprinkle some sandwich masala.
  • Next place cucumber slices and sprinkle some sandwich masala.
  • Now arrange onion slices and sprinkle some sandwich masala.
  • close the sandwich with another bread slice. Then place sliced bell pepper and sprinkle some masala on top.
  • Next place tomato slices and sprinkle some masala.
  • Lastly grated cheese and again sprinkle some masala.
  • Close with last bread slice, chutney side down.
  • Apply butter on top and grill it till it is crisp.
  • remove the grilled sandwiches with a wooden spatula.
  • Cut the sandwich into 4 pieces using a sharp knife.
  • Serve immediately with tomato ketchup and green chutney.

Colorful Mini Oats Uthappam..:))

Ingredient 
  • 1 Cup Oats
  • 1 Cup Semolina
  • 1 Cup Buttermilk
  • Salt to Taste
  • 1 Teaspoon Ginger Chilli Paste
  • 1 Teaspoon Cumin Seeds
  • 1 Cup Grated Carrot
  • 1 Cup Chopped Onion 
  • 1 Cup Grated Paneer
  • 1 Cup Chopped Bell Pepper
  • 1 Cup Grated Zucchini
  • 1 cup Coriander
  • 2 Teaspoons Oil



                                                                 Method


1. Take oats and make it into fine powder in a blender.
 2. Take this oats powder and Semolina in a bowl then add buttermilk, water, salt, cumin seeds, ginger chilli paste and mix it like a dosa batter.
 3. Put this batter on hot tawa and add carrot,onions,paneer, bell pepper ,zucchini and coriander as topping and add little oil on it.
 4. Cover it with a lid and let it cook on slow flame for 2 minutes. 
5. Now transfer this in a plate and serve hot with tomato or green chutney.

Oats, Flaxseeds & Dry Fruits Energy Bites .



Ingredients:




  • 1/2 cup quick cooking (Quaker)Oats
  • 1/4 Cup - Cashew nuts
  • 1/4 Cup - Almonds
  • 1/4 cup - Pecans
  • 1/4 Cup - Pista
  • 1/4 cup- Walnuts
  • 2 tbsp - Sesame Seeds 
  • 2 tbsp - Flax Seeds
  • 1/4 cup - Raisins
  • 12 - Dates 
  • 1/2 tsp - Cardamom Powder
  • 1/2 tsp - Cinnamon powder


                                                                      Method:

  • Dry roast the first eight ingredients separately and coarsely powder them separately and mix all the powders.
  • Grind dates and raisins together in a food processor. It gives you a sticky mixture.
  • Now add all the powder mixture ,cardamom powder and cinnamon powder to the food processor and just run the food processor for 2 seconds and make sure the powder is well mixed with date-raisin mixture. DO NOT over grind and make to smooth paste. This step is just to mix the ingredients.
  • Make laddu with this mixture by making small balls. The sticky mixture and the oil from almonds, walnuts and flax seeds helps to bind the laddu. If you cannot make laddu, consider using ghee or adding more sticky mixture from dates & raisins to shape the laddu .Store these in an air tight container. For variation, You may alter this  with any dry fruits , coconut powder , chocolate chip &  nuts of your choice.

Oats Roti





Ingredients



  • 1 cup whole wheat flour
  • 1/4 cup oats
  • Salt to taste
  • water
Method

  • To make the oat flour, grind the oats well.
  • It takes roughly 1/4 cup of oats to make about 1/2 cup oat flour.
  • Add the oats flour with whole wheat flour, stir in the salt.
  • Add enough water to make a soft dough.
  • Divide the dough into small balls.
  • Using a rolling pin, roll it into a flatbread. 
  • Place it in a non-stick/iron skillet.
  • Cook until brown on one side. Turn and repeat.
  • Serve it warm with any dal, side dishes of your choosing.

HEALTHY GRILLED SPROUTS SANDWICH.




                                                                     Ingredients:



  • 1 cup finely chopped cabbage, capsicum, carrots, cucumber, tomato and onion
  • 1 cup mix sprouts (moong bean, lima bean, chickpeas,, green lentils, black-eyed peas, green peas etc.)
  • 1 tbsp pizza seasoning
  • 2 tbsp mayonnaise
  • 1/4 tsp garlic paste
  • coriander leaves
  • 1 cup hung curd
  • 1 & 1/2 tbsp ketchup
  • salt and pepper
  • bread slices




        Method:


  •  In a bowl, add the hung curd, eggless mayonnaise, salt to taste, pepper, Italian pizza seasoning, garlic paste, coriander leaves and ketchup and mix all the ingredients well.
  •  Add the mix sprouts  and finely chopped vegetables  - capsicum, cucumber, carrots ,cabbage, tomato and onion to the hung curd mixture and mix all the ingredients together.
  • Take the mix and spread them over the brown bread slice 
    close sandwich with other slice.
  • Grill on a hot Panini or a sandwich toaster with a spray of oil…serve hot!
