Sweet Corn Masala curry.....)





   Ingredients

  •  boiled Sweet corn  - 2 cups
  •  Onion - 1, large, finely chopped
  •  Green chilies - 2, slit length wise
  •  Ginger garlic paste - 1 tsp
  •  Turmeric powder - 1/4 tsp
  •  Red chili powder - 1 tsp
  •  cumin powder  -1 tsp
  •  Coriander powder - 1 1/2 tbsp
  •  Garam masala powder - 1/4 tsp
  •  Tomatoes - 2, finely chopped
  •  Cashew nuts - 5, soak in 3 tbsp milk and make a smooth paste.
  •  Fresh coriander leaves - 2 tbsp, finely chopped
  •  Fresh cream - 1 tbsp 
  •  Salt to taste
  •  Oil - 1 1/2 tbsp



     Method

  • Heat oil in a cooking vessel. Once hot, add the onions and saute till transparent Add green chilies and ginger garlic paste and saute for 3 min on low to medium flame. 
  • Add turmeric powder, red chili powder, coriander powder, cumin powder and salt. Mix.
  • Add the tomatoes and saute till oil separates. Add corn and mix. Place lid and cook for 4 min. Add  the coriander leaves and 11/2 cups water and bring to a boil.
  • Place lid and reduce flame and cook for 15-18 min. Add garam masala powder, cashew nut paste and mix. Cook for 2 min Add fresh cream and mix continuously for a min on low flame. Turn off heat.
  • Remove to the serving bowl and garnish with fresh coriander leaves and serve with roti, naan or rice.




oreo chocolate smoothie....:)




      Ingredients





  • 2 Cups of vanilla ice cream
  • 10 to12  Oreo cookies
  • 1 cup of whole milk
  • 2 tbsp of chocolate syrup



     Method

  • Place the vanilla ice cream, milk, chocolate syrup and Oreos into a blender. Blend on high setting until the mixture is smooth.
  • Pour into a glass and serve. Garnish with a whole Oreo cookie. You can also top it off with some whipped cream mixed with crushed Oreos.

Cold Cocoa with Vanilla Ice-cream





    Ingredients



  • 2 1/2 cups milk
  • 5 tsp cocoa powder
  • 3 tsp cornflour
  • 4 tbsp sugar
  • 3 scoops vanilla ice-cream
  •  few ice cubes
  •  few chocolate 



    Method
  • Combine 1/4 cup milk, cocoa powder and cornflour in a bowl and mix well to make a smooth paste.
  • Heat the remaining milk in pan and bring to a boil.
  • Add the sugar and the prepared paste and stir continuously for 2 to 3 minutes on a medium flame.
  • Remove from the flame and stir continuously for 5 minutes to cool the drink.
  • Refrigerate for 1 to 2 hours. 
  • Serve chilled cocoa in a long glass , place one scoop of ice-cream on top  n add pieces of chocolate cut into small .
  • Delicious cold cocoa is ready 2 drink.



Carrot Pudding....*)


               

                        
     INGREDIENTS


  • 500 gm grated carrots
  • 500 ml milk
  • 3/4 cups of sugar
  • 1 tbsp. clarified butter (ghee)
  • almond flakes
  • 1/2 tsp roasted cardamom powder




        METHOD

  • Heat 1 tbsp ghee in a pan.
  •  Add grated carrots, Stir it well.
  •  After cooking for 1 to 2 and half a minute, add milk. Mix it well. 
  • Let the mixture cook for 10-15 minutes till the milk is reduced to half. 
  • Add half to 3/4th cup of sugar, as per taste. 
  • Cook till all the milk and water is dried out. 
  • Add 1/2 tsp. roasted cardamom powder and some roasted almond flakes.
  •  Keep it for cooling for 30-40 min so that it sets nicely.

Cheese Vegetable Frankie


* ingredients for topping
 
  • 1 big red bell pepper (cut lengthwise) 
  • 1 big green bell pepper (cut lengthwise) 
  • 1 big yellow bell pepper (cut lengthwise) 
  • 2 spring onions
  • 1 big onion (cut lengthwise)
  • 2 big carrots (cut lengthwise) 
  • 1/2 cup cheese spread 
  •  salt to taste
  • 1 tbsp Frankie masala 
  • 1 tsp chat masala
  • 1 tsp oil




* For the patty
 
  • 2 tbsp corn flour 
  • 1 tbsp raw mango powder
  • 1/4 tsp turmeric powder 
  • 1 tbsp ginger chilli paste
  • Oil to roast 
  • 3 small potatoes boiled and mashed
  • 1 cup boiled green peas
  • 1 cup boiled sweet corn 



* For rotis 


  • 1 cup wheat flour
  • 1 cup All purpose flour 
  • 1 tbsp oil
  • Salt



METHOD



  • Heat olive oil and sauté onion ,all bell pepper & carrots for 1 min. Sprinkle some chat masala and vinegar and allow it to cool.
  • Mix all the ingredients of the patty except oil and roll them into flat long oval patties.Heat oil in a pan and shallow fry the patties till brown on both the sides. Remove on a kitchen towel.
  • Make a dough by mixing all the ingredients and roll out rotis. Roast the roti on the tavi for 30 seconds on each side and wrap them up in a dry cloth.
  • Heat butter in a pan and roast the roti for 30 to 40 seconds on each side.
  • Apply a generous layer of cheese spread and sprinkle a good amount of Frankie Masala over it.
  • Place the onion, bell pepper & carrots salad in the centrer and place 1 patties and Make a roll. 






Grilled Vegetables Panini



     Ingredients



  • Zucchini,sliced vertically 1 medium
  • Red bell pepper 1/4 medium
  • Green bell pepper 1/4 medium
  • yellow bell pepper 1/4 medium
  • summer squashes,sliced vertically 1 medium
  • Eggplant sliced 1 medium
  • Olive oil 3 tablespoon
  • Salt to taste
  •  herb bread  slices 2
  • Mozzarella cheese 1 cup
  • Basil leaves a few
     

     Method
  1. Heat one tablespoon oil in a non stick pan.
  2. Sprinkle one tablespoon oil and salt over the vegetables.
  3. Add the  zucchini, green, yellow  and red bell peppers to the pan and cook till lightly browned all over.
  4. Heat a grill. Place the summer squashes and eggplants in the grill, close the lid and cook till lightly browned.
  5. Cut the mozzarella into thin slices. Place them over the base slice of the bread.
  6. Top it with zucchini, eggplants,green, yellow and red bell peppers, n summer squashes, Sprinkle some salt.
  7. Tear a few basil leaves and sprinkle over. Sprinkle a little salt and place the top slice over.
  8. Place the sandwich on the grill , drizzle a little oil and close the grill.
  9. Cook for a couple of minutes. Cut into smaller pieces.

Stuffed Hot Dog Rolls....)



Ingredients



  • 2 hot dog rolls
  • 1 tbsp melted butter for brushing
  • 1 cup finely chopped baby corn
  • 1/2 cup finely chopped capsicum
  • 3 tbsp butter
  • 2 tbsp finely chopped onions
  • 2 tbsp plain flour 
  • 2 1/4 cups milk
  • 1/4 tsp freshly ground pepper
  • 1/2 tsp chopped green chillies 
  • 4 tbsp grated processed cheese
  • 1 tbsp butter
  • salt to taste
  • 1/4 cup grated processed cheese
  • a few drops of Tomato ketchup




 

Method 

  1. Divide each roll horizontally into two parts and scoop out the centres.
  2. Brush both the sides with a little melted butter and keep aside.
  3. Heat the butter in a non-stick pan, add the onions and sauté on a medium flame for 1 to 2 minutes.
  4. Add the plain flour, mix well and cook on a medium flame for 1 to 2 minutes, while stirring continuously.
  5. Add the baby corn and capsicum, mix well and sauté on a medium flame for 1 to 2 minutes.
  6. Add the milk, mix well and cook on a medium flame for 3 to 4 minutes, while stirring continuously.
  7. Add the salt, mix well and cook on a medium flame for 1 minute.
  8. Add the black pepper powder, mix well and cook on a medium flame for 1 to 2 minutes.
  9. Bake the brushed hot dog rolls in a pre-heated oven at 400°f for 5 to 7 minutes.
  10. Spread a little of the prepared stuffing in the hollow cavity on the scooped sides of the toasted bread.
  11. Sprinkle a little cheese on top of each roll and bake in a pre-heated oven at  400°f for 10 minutes.
  12. Pour a few drops of tomato ketchup on each roll and serve immediately.
